Homemade Pasta Recipe & KitchenAid Pasta Attachments

This homemade pasta recipe is simple and delicious! We started making our own pasta a couple years ago with a manual pasta maker. We enjoyed the process of making our own lasagna noodles and also fresh noodles! It does take a little extra time, but it is well worth it if you are able to do it!

I was so excited to be recently gifted the KitchenAid pasta roller attachments for my birthday. These rollers are made incredibly well. They are so heavy and sturdy! They have definitely helped to speed up the process of making pasta and also look so sleek and beautiful! They are a wonderful tool to have or give if you enjoy making your own pasta!

Ingredients

  • 1 cup 1 all purpose flour (120 grams)

  • 1 cup 1 semolina flour (167 grams)

  • 4 tablespoons 4 water (60 grams)

  • 2 large 2 eggs (beaten)

  • 1 teaspoon 1 kosher sea salt (5 grams)

  • 1 tablespoon 1 olive oil

Directions

  • Measure flours into mixing bowl.
    Add remaining ingredients.
  • Mix with dough hook on the lowest setting.
    After the dough has come together, knead for about 5 minutes on a setting or two faster.
  • Divide the dough into 4 equal pieces and shape into balls.
    Wrap and allow to rest in the refrigerator for about an hour.
  • To make pasta:
    Sprinkle work surface with flour.
    Prepare dough according to your pasta maker.
  • Boil water in pot.
    Cook pasta for about 5 minutes or until your preferred firmness.
    Drain pasta and toss with olive oil to prevent sticking.
    Top with your favorite sauce.

Notes

  • You can use all purpose flour entirely, if you don’t have semolina. You may have to add extra all purpose flour or dust your dough a little more as you are making your pasta if it is a little too sticky!
  • You can also mix and knead the dough by hand if you don’t have a mixer. I have also made the dough in my bread machine when I didn’t have time to make it in the mixer.
