Homemade Pancakes Recipe

Homemade pancakes are a family breakfast favorite. This is our favorite go-to recipe. I searched for years (literally) for a great pancake batter recipe. I have tried so many recipes that I found online and they were never light and fluffy enough for me.

After a while, I decided to test and adapt different recipes to find the one we liked the best. The secret is in the baking powder (make sure to pick aluminum free)!

Our children love different variations of these pancakes too. Adding mini chocolate chips to the batter makes a pancake everyone will absolutely love! Homemade pancakes are so good, you will never go back to frozen pancakes!

Ingredients

  • 1 cup 1 all-purpose flour

  • 1 tablespoon 1 sugar

  • 3 teaspoons 3 baking powder

  • 1/2 teaspoon 1/2 baking soda

  • 1/2 teaspoon 1/2 kosher salt

  • 3/4 cup 3/4 whole milk

  • 1 1 egg

  • 2 tablepsoons 2 butter (or avocado oil)

  • 1/2 teaspoon 1/2 vanilla extract

  • 1/2 cup 1/2 chocolate chips (optional)

  • oil for cooking

Directions

  • Combine dry ingredients in a bowl: flour, sugar, baking powder, baking soda, salt.
  • Combine wet ingredients in a 2 cup measuring cup: milk, egg, butter/oil, vanilla extract.
  • Pour the wet ingredients into the bowl of dry ingredients and whisk until the lumps are gone.
    Add chocolate chips to the batter, if using.
    Let batter rest for 5 minutes or more.
  • Heat a large cast iron pan on medium heat.
    Coat with oil.
    Pour 1/4 cup of batter onto the pan.
    Cook until small bubbles appear on the surface.
    Flip with a spatula.
    Cook until the other side is lightly browned.
    Repeat until all the batter is used.
  • Serve with softened salted butter and real maple syrup!

Notes

  • Mixing Ingredients: You can definitely put your wet ingredients in a regular bowl. I like the convenience of not dirtying a bowl and a measuring cup and the large measuring cup has a pour spout to make less of a mess.
  • I have made a lot of pancakes in my life and they were not as pretty of a brown color until I started using a cast iron pan. A griddle or skillet works fine also. If your cast iron pan is seasoned well, you do not need to keep oiling it in between batches and it shouldn’t stick.
  • Size of the pancake: Feel free to make your pancakes larger or smaller… Whatever your heart contents!
