Homemade graham crackers are a thing. I never thought about making my own until I had kids. Recently, organic graham crackers from the store weren’t cutting it. They were kinda tasting funny and didn’t stay fresh for very long. They kicker was when we made a pie crust with them and it threw the whole taste of the pie off. I knew I had to make my own crackers from then on.

Here is our recipe below! It is pretty simple and they are super addicting! We hope you enjoy them as much as we have!

Ingredients

  • 1-1/2 cups 1-1/2 all purpose flour (187.5 grams) *see notes

  • 1-1/2 cups 1-1/2 whole wheat flour (195 grams)

  • 1 teaspoon 1 ground cinnamon

  • 1 teaspoon 1 baking powder

  • 1/2 teaspoon 1/2 baking soda

  • 1/2 teaspoon 1/2 ground nutmeg

  • 1/2 teaspoon 1/2 kosher sea salt

  • 1/2 cup 1/2 butter, softened

  • 1/3 cup 1/3 brown sugar (57 grams)

  • 1/3 cup 1/3 honey (113 grams)

  • 1 teaspoon 1 vanilla extract

  • 1/2 cup 1/2 heavy cream

Directions

  • Make the Dough for Graham Crackers
  • In a bowl, combine the flours, cinnamon, baking powder, baking soda, nutmeg, and salt.
  • Using the paddle attachment of your stand mixer, cream the butter, brown sugar, honey, and vanilla until mixed well.
  • Add the flour mixture in 2 parts, alternating with the heavy cream.
    Scrape down the bowl between each part.
  • Divide the dough into 2 and shape into 2 rectangle disks.
    Cover with plastic wrap and place in fridge for an hour.
  • Make the Graham Crackers
  • When ready to bake, preheat the oven to 350F.
    Line 2 half sheet baking pans with parchment paper.
  • Keep the second disk in the fridge to keep firm until ready to roll out.
    On parchment paper (flour if necessary), roll out one disk into a rectangle to about 1/8 inch thick.
    Using a pizza cutter or sharp knife, cut the dough into 3 inch squares.
    Place the squares onto the baking sheet about 1/4 inch apart.
  • Bake for about 12-15 minutes, until the edges begin brown.
    Let cool on the pan for about 5 minutes before moving to a cooling rack.

Notes

  • You can skip the all purpose flour and use all whole wheat flour if you would like. This recipe makes a slightly “softer” graham cracker.
  • Use a ruler to help cut your crackers if you would like uniform graham crackers.
  • You can also use a chopstick or toothpick to poke holes in them if you would like them to resemble store bought crackers.
