Chocolate Chia Pudding

Chocolate chia pudding is so simple to make and a family favorite snack! It is healthy (full of protein and good fats) and delicious! Chia pudding is also incredibly versatile and the possibilites are endless in the different flavors and toppings to add to it. Try it out if you haven’t had it before, I think you and your family will really enjoy it!

Ingredients

  • 1 can 1 full fat coconut milk

  • 5 tablespoons 5 chia seeds

  • 1/4 cup 1/4 maple syrup

  • 2 tablespoons 2 cacao or cocoa powder

  • 1/8 teaspoon 1/8 salt

  • 1 teaspoon 1 vanilla extract

Directions

  • Use a 32 ounce mason jar.
    Measure and pour all ingredients into your container
  • Place a lid on your mason jar.
    Shake your ingredients until mixed well.
  • Place in refrigerator for 3 or more hours.
  • Enjoy!

Notes

  • This recipe can be customized in so many ways! You can change the milk to almond, regular whole milk, etc. You can change the sweetener to honey, monkfruit sweetener or whatever you normally use in your home. You can also leave out the cacao powder if you want vanilla chia pudding.
  • You can mix all the ingredients in a bowl if you don’t have a mason jar. I like the simplicity of using the jar and not having to dirty anything else.
  • Some people find the chia seeds/texture of the seeds too large. You can blend the mixture before you refrigerate it. You can also play with it and use more or less chia seeds depending on how thick you like your pudding.
  • We enjoy our pudding cold and a little thicker, but you can definitely eat it right after it is mixed if you like it that way!
