A Cast Iron Dutch baby (or German pancake) was always a special treat to have at restaurants for breakfast, but years ago, I discovered they are incredibly simple to make! The hardest part about making this is cleaning up the blender!

I started making them probably 10 years ago before I had a cast iron pan in a glass Pyrex dish and it worked well enough! When I got my first cast iron pan, I definitely noticed a difference in my Dutch baby! It helped to give the edges a little crispness!

Now a days, I introduced these delicious treats to my children and they love them! One loves to put our homemade strawberry jam on it, another just loves it with syrup. I personally love them with a little powdered sugar, fresh fruit, and homemade whipped cream! The possibilities are endless!

This cast iron Dutch baby recipe is a delicious and easy to make treat for breakfast, brunch, a snack, or dessert!

Ingredients

  • 3 large 3 eggs

  • 1/2 cup 1/2 all-purpose flour

  • 1/2 cup 1/2 whole milk

  • 1 tablespoon 1 maple syrup (or sweetener of choice)

  • 1 teaspoon 1 vanilla extract

  • 1/8 teaspoon 1/8 kosher sea salt

  • 1/8 teaspoon 1/8 nutmeg

  • 4 tablespoons 4 unsalted butter

Directions

  • Preheat oven to 425F.
    Place a 10″ cast iron pan (or oven safe dish) into the oven to heat for at least 5-10 minutes.
  • In a blender, place: eggs, flour, milk, maple syrup, vanilla extract, salt, and nutmeg.
    Blend until smooth.
    Scrape down the sides, if needed and blend more.
  • Remove the hot pan carefully from the oven
    Place the butter in the pan to melt.
  • Add the batter to the pan and bake for 15-18 minutes, until the edges are golden brown.
  • Remove the pan from the oven and serve while hot.
    Be careful! The pan and pancake are hot!
  • Top with your favorite toppings like fresh fruit, jam, syrup, powdered sugar, whipped cream, etc.

Notes

  • While it is ideal to make this in a cast iron pan, it is not necessary if you don’t have one.
  • While this says it is 4 servings, it can easily be eaten by one or two people if you’re hungry!
  • Some people enjoy other spices like cinnamon in their Dutch baby.
  • Any sweetener works! Honey, maple syrup, sugar, etc!
