Cinnamon streusel coffee cake is as delicious as it sounds. A buttery, moist cake with a streusel layer in the middle and on top!

We were wanting some muffins, but didn’t have our new muffin pans yet, so I decided to throw this together in a glass dish. It was much simpler than portioning out muffins and it was quite tasty.

The whole family enjoyed this treat! It was much simpler than muffins and pretty quick to throw together! It paired well with coffee, but also just a glass of cold raw milk!

Cinnamon streusel coffee cake is simple and delicious! It is easy to make and good for breakfast, a snack, dessert, with or without coffee!

Ingredients

  • Cake
  • 8 tablespoons 8 butter, softened (1 stick)

  • 1/2 cup 1/2 sugar

  • 2 teaspoons 2 vanilla extract

  • 1 large 1 egg

  • 2 cups 2 all purpose flour

  • 3 teaspoons 3 baking powder

  • 1/8 teaspoon 1/8 salt

  • 3/4 cup 3/4 milk

  • Filling and Topping
  • 8 tablespoons 8 butter, softened (1 stick)

  • 1 cup 1 all purpose flour

  • 1 cup 1 brown sugar

  • 2 tablespoons 2 cinnamon

Directions

  • Preheat the oven to 350F.
  • In the bowl of a mixer, cream butter and sugar.
    Add the egg and vanilla extract.
  • Add 1 cup of flour, 2 teaspoons baking powder, and 1/8 teaspoon salt.
    Mix until mostly combined.
    Add 3/4 cup milk.
    Mix until mostly combined
    Add 1 cup of flour, 1 teaspoon baking powder.
    Mix until well combined.
  • To make the filling and topping:
    Add ingredients into a bowl and use a pastry blender or fork to make into crumbs.
    OR add ingredients into a food processor and pulse until coarse crumbs are formed.
  • Assemble:
    Pour 1/2 the batter into an 8×8 glass baking dish.
    Use an offset spatula to spread into an even layer.
    Pour/sprinkle a little less than half of the filling/topping over the cake layer.
    Gently spread the filling evenly on the cake layer.
    Pour the remaining batter on top of the filling.
    Spread evenly on top of the filling.
    Pour/sprinkle the remaining topping on top of the cake layer..
    Spread evenly.
  • Bake for 45 minutes or until a toothpick comes out clean.
  • Allow to cool before serving. It is great warm or cooled!
