Sous vide steak is a delicious and easy meal. Many high end restaurants use this method too cook their food to perfection. It is done by immersing cooking vacuum sealed food in water set to a specific temperature to ensure your food is never overcooked.
For steaks, that means you achieve your steak perfectly done. We love our steaks medium rare, and the sous vide delivers every time! Our family loves to top our steaks with our homemade compound butter!

Since using the sous vide for over 5 years, we have introduced multiple friends to using a sous vide steak (and other items) and they really love the process and the product! It cooks all proteins well, especially pork chops, burgers, chicken breast, salmon, desserts and also vegetables! We really like eating asparagus cooked in this method. I have also made sous vide egg bites to have on hand for a quick breakfast! You can even use it to pasteurize things, like eggs to make homemade mayo that would store longer! Breville the Joule Turbo Sous Vide Machine (We have a Joule and love it. At the time of the post, it seems to only be sold by third party sellers at a much higher price.)
Anova Culinary Sous Vide Precision Cooker 2.0 (Our family members have this one. We have used it and it works well and is at a great price point!)
Rubbermaid Commercial Products, Plastic Space Saving Square Food Storage Container
Ziploc Gallon Food Storage Freezer Bags (We usually use these to sous vide.)
FoodSaver 4800 Series Vacuum Sealer Machine (We occasionally use this for larger items to sous vide.)

Sous vide steak is one of the easiest and best ways to cook a steak. It cooks your steak perfectly each time!

Ingredients

  • 2 2 NY Strip or Ribeye steaks

  • salt

  • pepper

Directions

  • Set up sous vide and water bath. (Start fill with hot water for a quicker start.)
    Set the temperature and cook time for your steaks based on your app.
    On the Joule, for medium-rare, we usually set it to 133F.
    Fresh 1″ steaks cook for 1 hour. Frozen 1″ steaks cook for 1 hour 30 minutes.
    Ensure you select the correct cook time based on the thickness of your steak and if it is fresh or frozen.
    The app for your sous vide should have the correct settings.
  • Season steaks liberally with salt and pepper on both sides.
    Place inside ziplock bag or vacuum sealed bag.
  • Place in water bath when it reaches the correct temperature and start your timer.
    You can leave your steaks in the water bath for about an hour after they are done cooking to “hold” it until you are ready to sear them and serve.
    They will not be over cooked!
  • When you are ready to eat, fire up a grill or heat a cast iron pan on high to sear each side for about 1 minute each.
    Serve it up on top of salad or with your favorite side dish! We enjoy eating it with Garlic Parmesan Pasta!

Notes

  • Sous vide will work for any steak cut! Feel free to try different cuts to find your favorite!
  • Feel free to season your steaks to your liking. Sometimes we use Montreal Steak Seasoning. You can season it in your usual way!
  • We’ve cooked 10 steaks at a time this way! It is a great way to make steaks for a group.
  • If people in your family like their steaks done in different ways, cook them to the least doneness and then sear the others longer to cook them more.
