Monterey Chicken

Monterey Chicken can be found at many restaurants. Each place seems to have their own version of it. This Monterey Chicken was inspired by the dish at Chili’s, although we haven’t been there in years, so I’m not sure if they even still have it….

It is a chicken breast topped with BBQ sauce, cheese, bacon, diced tomatoes, and green onions. Pair it with your favorite side dish for a delicious dinner!

I like to use our sous vide to cook the chicken for a perfectly cooked, juicy chicken breast. The oven works fine, but you won’t be disappointed with a sous vide chicken breast or any other piece of meat. We highly recommend it!

Ingredients

  • 2 2 Chicken Breasts, boneless, skinless

  • salt and pepper

  • 4 teaspoons 4 BBQ sauce

  • 1 cup 1 Mexican blend cheese, shredded

  • 1/2 cup 1/2 bacon bits

  • 1 1 tomato, diced

  • green onions, chopped

Directions

  • Slice 2 chicken breasts in half crosswise to make 4 half inch thick chicken breasts.
    Season with salt and pepper.
    Place in a freezer bag to sous vide.
    Sous vide according to your device.
    The Joule set to 45 minutes at 149 degrees.

  • After the chicken is cooked in the sous vide or oven, place on a baking sheet.
    Spread about 1 tsp of BBQ sauce on each piece.
    Sprinkle about 1/4 cup of cheese on each piece.
    Sprinkle bacon on top of each piece.
    Place in oven to broil on high to melt the cheese for about 5 minutes.
    Keep an eye on it to ensure it doesn’t burn!
  • Remove from the chicken from the oven when cheese is melted.
    Top with diced tomatoes and green onions.

Notes

  • If you do not have a sous vide, you can also bake your chicken breasts.
    I would recommend baking them at 400 for about 10-15 minutes.
    Check internal temperature to reach 160 to ensure they are done.
  • This dish pairs well with mashed potatoes and most pastas.

  • Feel free to tweak to your liking! I like extra BBQ sauce on mine. The children love extra bacon on theirs! It is fully customizable!
